Ganon boasts versatile stats, having high HP, Attack, Defense and Special Attack. It also gets a useful ability, Insomnia, which enables it to be a nice counter to the ever annoying Medicine. Flare Boost gives it an option to boost its Special Attack using a Flame Orb. However, its low Speed is a disadvantage, as well as its weakness to Fighting.

Ganon's great Attack and Defense stats just scream for a Bulk Up set; and he gets one. Payback will often hit with 100 power because Ganon is so slow. Sucker Punch is a powerful priority attack Ganon gets STAB on, which can replace Payback. Dragon Tail inflicts passive damage as well besides regular damage if you have entry hazards laid down. It also gets rid of enemy boosts. You may also want to use Outrage over it though, because that attack has double the power Dragon Tail has. Earthquake finishes your coverage by hitting Steels hard.

With Rock Polish to get Ganon's Speed higher, and an immediate Flare Boost activation after that, Ganon effectively has a Special version of Shift Gear (that burns). Dragon Pulse and Dark Pulse are two STAB attacks, covered by Flamethrower or Fire Blast to hit Steels with. Focus Blast can also be used, but keep the accuracy in mind.

Ganon can hit hard right from the start with a Choice Band worn and the powerful Outrage. The moves have been explained in the earlier Physical set. Brick Break is a filler, but the world may never know when it will be useful.

With Ganon's also awesome 114 Special Attack, a Choice Specs set with Draco Meteor as main move is quite obvious. The coverage has been explained in the other Special set. Dragon Pulse is for when Draco Meteor's PP has reached 0, or when you want to keep Ganon in longer.
Other Options
Dragon Dance, Nasty Plot, Taunt, Work Up, Charge Beam
Dragon Dance is another boosting option, but Ganon is too slow to make it work.
Nasty Plot has the same story as Dragon Dance for Ganon. It can be used in a Trick Room set though.
Taunt is always useful against walls, but Ganon is too slow for it.
Work Up is yet another boosting move for Ganon, which could be used on a mixed set.
Charge Beam is... again another boosting option, which also damages the target a bit.
Checks and Counters
Fighting types like Leeroy Jenkins can hit Ganon very hard with their STAB Close Combat. Faster Dragons can hit Ganon hard with their STAB attacks as well. Yuugi can switch into a physical set and set up or outright KO Ganon. The special sets can be walled by Lolwut Pear, for example, who can in return Toxic Ganon and outstall.
