I would like to see Byakuren and Toyosatomimi no Miko in the ultimate battle of East Asia.

It may be an exciting battle to witness, but the fight would be so explosive, and it would carry on for so many centuries. All of Asia would be in ruins that would take multiple millennium to repair at the end.

I wish Youkai and Humans could get along better.

Byakuren and friends have almost succeeded in getting them to get along better and right before it's finally done... Koishi messes up everyone's minds and they have to start over again.

I wish a Renko Griffon. (Totally not repetitive)

The Renko Griffon would have been created by n00bs who didn't even know what Touhou was, so it would look nothing like the actual character.
